1. VIETNAMESE BREAD

a2 INGREDIENTS
  • 2 breads
  • 3 fresh eggs
  • 50gr Pate Royal Poultry Liver Mousse With Cognac
  • 50gr coriander
  • 50gr tomatoes, sliced
  • 1 cucumber, long-side sliced
  • 50gr carrot, shredded
  • 100gr oyster mushroom, Bunapi mushroom and origin mushroom, diced
a2 METHOD
  1. High-heat the pan with olive oil, add mushroom and stir-fry untill soft, season with salt and pepper
  2. Add 30gr Pate Royal in a bowl and slightly press with a spoon to soften it a bit. Add eggs and whisk them together, add mushroom.
  3. Pre-heat the oven at 180oC for 10 minutes, slit the bread to the long-side way, toast the bread both sides in 3 minutes.
  4. Season salt and pepper to the eggs mixture, medium-heat the pan with olive oil then fried the egg. Form it into a roll for easier cutting.
  5. Spread the Pate Royal inside the bread, fill the bread with egg slices, tomato, cucumber and coriander.
